The Art of Southern Biscuits
A nice treat in today's Atlanta Journal-Constitution Food Section. One of the best Southern chef's around, Scott Peacock, gives us a lesson in how to make a good Southern buttermilk biscuit. It is an excellent lesson and he doesn't miss any of the critical points. Scott worked and studied along side the late Edna Lewis a masterful Southern cook and they even wrote a great Southern cookbook together The Art of Southern Cooking. I have only had the opportunity to meet Scott once when he was using the open hearth and beehive oven here in Roswell at Bulloch Hall to prepare the feast for Edna's 80th birthday party but he knows his stuff (James Beard award etc,) and is the chef at Watershed here in Atlanta. If you want to learn how to make a great biscuit...here is the lesson.
